331 big port heads

are the valves the same in a 331 big exhause port heads as in the smaller exhaust port heads

No. That's why the ports are different sizes.

They're all different part numbers: '46-'48, '49-'51, '52, '53-'56 (exhaust valves, that is)

 That's right. Cadillac revised the heads on an almost continual basis throughout the 50's.
